Saturday Suppers- Baked Ravioli with Roasted Garlic Chicken Strips


Are you looking for something different for dinner this Saturday? My baked ravioli and roasted garlic chicken are sure to tantalize the taste buds. Ravioli, is probably one of my favorite dishes along with rice beans hence my being half Colombian, half Italian. While scouring through my fridge I found some odds ends, left over marinara sauce, handful of mozzarella, one empire kosher chicken breast and a bag of three cheese ravioli. Like an ephiphany it came to me- Bake em!  So I decide to bring all  these odds and ends together to create a symphony of flavor that'll warm your belly and your heart -we sure need it with all the snow we keep getting in NYC. Here's my recipe for Baked Ravioli with Roasted Garlic Chicken- give it a try and send me your reply!

Ingredients
2 cups of marinara sauce (I always have homemade on hand but jar sauce is fine)
1 cup of shredded mozzarella cheese
1/2 cup of parmesean cheese
1 handful fresh basil
1 lb of 3 cheese ravioli
3 cloves of garlic- sliced
1/4 cup of olive oil

Directions
Preheat oven to 375 degrees
Cook ravioli according to bag and drain
Saute garlic chips in olive oil until lightly golden (remove & reserve)
Add chicken to oil and saute until 3/4 of the way cooked ( it will finish in the oven)
Meanwhile, Warm up marinara sauce
Toss Ravioli with sauce and chicken, sprinkle in garlic and cheeses
Add to baking pan top with a little more mozzarellza and grated cheese-
Cook 10 minutes until brown and bubbly
So Simple, So Spectacular
