Weekday Winner Dinner- Part 1

I'd like to propose Winner Dinner Wednesdays! Each Wednesday I will be posting family friendly meals promised to win over your pickiest eaters.Feel free to email me with your recipe request. The Wednesday Winner Dinner pictured above is a personal favorite of  mine- Asian Glazed Chicken over Sauteed Spinach and Penne.

For the Chicken
1/2 cup of Very Teryaki Marinade
1/4 cup of dijon mustard
1 tbsp of fresh ginger
1/4 olive oil

Directions
Preheat oven to 425
Whisk together marinnade ingredients  Pour over chicken
Allow to sit 30 minutes
Place Chicken on broiler pan roast 25-30 minutes or until cooked through

For the Penne
1 lb penne
1/2 small red onin sliced thin
1/2 lb ofpork sausage
1 bag of fresh spinach

Directions
Cook Penne according to box, drain & reserve past water
Saute red onion until soft
Toss in Sausage
In a separate skillet, sautee spinach with olive oil until wilted
Add spinach and its' cookin gliquid to sasusage pan, toss in pasta
Add in 1/4 cup of pasta cooking water
Finish with 1-2 tbsp of butter
Adjust seasoning (salt & pepper)
Enjoy!
